Apprenticeships

Cairn Group work in partnership with Lifetime Training to provide work-based training and development programs known as apprenticeships, across a wide range of roles within hospitality. These qualifications are designed to give you the sustainable skills and knowledge to succeed in your chosen career or development for your next career move.

Each apprenticeship is the equivalent to a course studied at school, college, or university, with the key difference being you can earn (your normal rate of pay) whilst you learn! Most apprenticeships last between 12 and 15 months and are supported by an on-site mentor, and Lifetime Training.

We’ve also recently partnered with ‘Raise the Bar’ who offer apprenticeships with an emphasis on celebrating Women in Leadership and diversity as a whole. This programme, offered at Level 3 or Level 5, aims to inspire, motivate, and empower current female leaders and stimulate future talented women to meet their potential.

Whilst studying you are also able to gain extra perks through the ‘NUS Extra Discount Card’. This helps stretch your hard earnt cash via high street discounts and access to exclusive events.

Top Talent Programme

Looking to be the next operations manager or general manager of the future? We run a ‘Top Talent’ leadership development program for our aspiring managers to train all the principles required.

This 12-month course involves 10 face-to-face sessions with subject specialists within our business, allowing you to learn everything you need to know to be one of our leaders of the future. You will complete the course with an in-depth knowledge of areas such as Revenue, Finance, Human Resources, Sales and Marketing, etc.

This programme is linked with a recognised management qualification at either Level 4, or Level 5, depending on your current/ previous experience, fully funded by Cairn Group.

Revenue Academy

This course is aimed at anyone wanting to learn more about the basics of revenue management, or someone who hopes to move into revenue management in the future.

Delivered as a two-day course, content will include topics such as:

  • Review the purpose of Revenue Management and its history
  • Identify the 3 key Market measurements
  • Define Market Share and “Fair Market Share”
  • Competitor SWAT in action
  • Market Positioning & Weighting
  • Overbooking

Once completed you will then work with a mentor to initiate a revenue generating idea for your venue/ central support, sharing the results prior to a graduation dinner.

Successful candidates are then invited to attend the next level of Revenue Management training, designed for people who want to follow a revenue manager career path.

Chef Academy

Led by our Group Culinary Director, Rodney Jones, sessions bring together chefs from across the company to enhance their knowledge and skills.

Chefs are an integral ingredient within the business and those enrolled in Chef Academy will be working towards achieving a widely recognised qualification, which we hope will encourage more people to take up careers in the hospitality industry.

On top of internal training, keen cooks will have the chance take part in educational trips such as a foraging expedition in the Scottish Borders, ‘farm to fork’ farm visits, butchery masterclasses, production demonstrations and fine dining in London. After each stage the chefs will reflect on what they have learnt leading to ‘The Finale’, which will see them design and deliver the menus at Cairn Group’s annual Leadership Conference.

Pioneered to grow the next generation of culinary talent in the hospitality industry, additional learnings will range from exposure to all areas of the discipline, from cookery skills, understanding ingredients and health and safety procedures, to market trends and seasonality.
